Known by many names- tadka, tirubath, chaunk, phodni, baghaar- this one technique forms the basis of most Indian cooking, and is a core skill to start your foray into the world of spice. 

Tadka refers to the process of tempering spices in oil to unlock their full flavor potential and to seamlessly meld the flavors into every bite of the dish. Tempering spices is a great building-block skill to create complex and varied flavor profiles. Apart from being an important part of Indian cuisine, this technique can be applied to any other dish to level up your cooking game. 

This class aims to demystify Indian cooking and give you the confidence to make delicious Indian food at home! We'll introduce and review the spices, herbs, and aromatics often used in Indian cooking, as well as regional differences. Then you’ll learn tips and tricks for a successful tadka, and other ways of ensuring that the flavors of spices shine in your cooking. Try your hand at tempering spices and creating delicious Indian dishes like Nimmakay Annam (lemon rice) and a nourishing lentil and vegetable stew. 

On the menu: 

  • Nimmakay Annam (Lemon Rice) 

  • Masala Khichdi (Moong and rice stew with assorted vegetables and paneer)

  • Sambar Saadam (Pigeon pea and tamarind rice stew with assorted South Indian vegetables) 

  • Papad (lentil crisps) 

  • Mor (refreshing yogurt drink) 

Classes are BYOB. This class is vegetarian and can be gluten-free. The skills obtained in this class can be used for vegan cooking, but we will be using ghee (clarified butter) in all dishes. Please contact us if you have any questions about dietary restrictions.
