Love mushrooms and want to branch out beyond pre-sliced baby bellas from the grocery store? This is the class for you! St. Louis is home to loads of gorgeous gourmet mushrooms, and here we'll feature varieties from Ozark Forest Mushrooms. We’ll start by reviewing a variety of different mushrooms and discussing flavor and texture differences, uses for different types of mushrooms, and best buying practices. Next, we’ll divide into groups to cook mushroom-based dishes before sitting down to dinner to taste everyone’s creations. On the menu:
Lion’s mane mushroom fritters with green herb sauce
Ricotta & shiitake gnocchi with browned butter sauce
Oyster mushroom tacos with chiles and avocado crema
Mushroom tart with chevre & black pepper pastry
