SOLD OUT Seasonal Cooking: Cooking with Local Apples

Apple picking at Eckert’s marks the unofficial start of autumn in St. Louis, so in this class we’re leaning into the fall feels and exploring the sweet and savory dishes you can make with Eckerts’ apples! We’ll start with an apple tasting, comparing a variety of apples and discussing the best uses and flavor pairings for different apple types. Next, we’ll divide into groups to cook entrees, sides, and desserts that feature apples and the flavors that pair so well with them. Lastly, we’ll sit down to dinner to taste everyone’s creations! On the menu:

Chicken thighs with mustard, caramelized fennel & apples 

Brined pork loin with apple-frisee salad & apple-parsnip puree

Apple & thyme galette with white cheddar pastry

Apple cider risotto with brown butter & sage

Rosemary & black pepper caramelized apples over ice cream

This class can accommodate vegetarian students. Please leave a note at checkout if this applies to you or anyone in your group.
